Sofia is a teacher, mother of three and wife to one. She received her Elementary Education degree from Pennsylvania State University and went on to receive a secondary certification in Spanish Language Instruction from Rosemont College. She taught 3rd grade in Houston, TX and 2nd grade in Philadelphia, PA before shifting her focus to teaching Spanish to middle school students in a suburb of Philadelphia. During her teaching career, she observed a variety of school lunch programs which helped spark her interest in school and childhood nutrition. She is currently a stay-at-home mom, teaching her kids to read nutrition labels and to broaden their palates.
When she is not grocery shopping, driving her children around, or teaching aerobics, she can be found running (for fun), eating good food and drinking good wine, hanging out online, and waging the war against poor nutrition, childhood obesity, and processed junk food.
